INTRODUCING CHARLOTTY® SOFT-RIPENED CHEESE
We’ve been playing with this cheese for several years, giving it to friends and family, calling it Cheese 4. After much urging, we are producing it for the public in limited quantities.
Charlotty® is named in honor of Charlotty White, a local hero who exemplified the best of our community. Born around the time of the Revolutionary War, she was the child of a freed slave and a Native American and was the area’s healer and midwife for decades. Charlotty took in and treated poor or troubled people before the town’s poor farm was established. Her name invokes a spirit that was courageous, complex, and all-embracing.
Local lore maintains that she birthed more babies than any single individual in the history of the town and healed them as they grew up. She lived to be 87, so that may well have been true.
There’s even a road named after her in Westport, but many today don’t know who she was. Her name has been spelled many ways, and we’ve used the one that is most like the way the old-timers say it.
Charlotty is a natural name for our cheese, made of simple healthy ingredients and with a complex flavor that embraces your taste buds like nothing else. We think Charlotty White would have liked it.
Flavor Profile: Lemony, nutty, with hints of butterscotch and caramel.
Ingredients: Our pasteurized cows’ milk, sea salt, natural enzymes, milk cultures.
